Brian Ledet’s journey to Boston was born from the devastation of Hurricane Katrina. Forced to leave his beloved New Orleans, he and his wife, Jennifer, carried with them not only their resilience, but a powerful mantra: “Be a New Orleanian wherever you are.” This sentiment fueled Brian’s desire to recreate the vibrant spirit of his home, a spirit defined by community, music, and the simple joy of sharing food. His lifelong connection to cooking, from his early days at Swenson’s Ice Cream to his formal training under Cordon Bleu instructors, made him uniquely equipped to bring a taste of NOLA to his new city.
Despite finding a welcoming home in Boston, Brian felt a crucial piece of his identity was missing: authentic New Orleans cuisine. Determined to fill this culinary void, he embarked on a mission to deliver the true flavors of his hometown. This wasn’t about generic “Southern food” or a New England twist on Creole classics; Brian sought to recreate the genuine taste of New Orleans, from the rich red beans and rice with andouille sausage to the iconic po-boys.
This passion culminated in the creation of Revelry N’awlins Cuisine. Brian’s food truck is more than just a business; it’s a celebration of his heritage, a way to share the warmth and revelry of New Orleans with Boston. Each dish, made with authentic ingredients and recipes, reflects the spirit of community and celebration that defines his home. Whether serving homesick transplants, curious locals, or nostalgic tourists, Brian Ledet brings the heart of New Orleans to every plate.
